8 oz 60% or 70% cacao dark chocolate chunks
4 oz heavy cream
Coating options:
¼ cup unsweetened cocoa powder
¼ cup minced sweetened, flaked coconut
¼ cup minced roasted walnuts
¼ cup minced roasted Pistachios
¼ cup chocolate colored sprinkles, or color/s of your choice

Line a baking sheet with parchment paper
Measure out the chocolate chunks and place into a small bowl, set aside
Pour the heavy cream into a small saucepan
Heat on stove top over medium heat to a boil
As soon as the heavy cream is simmering, turn off the bummer
Place the chocolate in with the hot cream
Stir continuously with a spatula until the chocolate is melted and the cream and chocolate are blended well
Refrigerate the mix for 1 hour
Spoon out the firm chocolate with a small or medium cookie scoop or melon baller onto your parchment covered baking sheet
Place back into the refrigerator for additional 15 minutes
Remove from the refrigerator and roll each truffle with your chosen sprinkles and/or nuts
Note:
When stored at room temperature, truffles remain good for 7 to 10 days. However, stored in the refrigerator (which is recommended) they should last up to 6 months.
