Ingredients
10 large eggs, beaten
1⁄2 cup almond milk
1⁄4 cup dairy-free parmesan cheese, shredded
1⁄4 cup dairy-free cheddar cheese
1 russet potatoes, peeled and diced
1 red or green bell pepper, diced
1⁄4 cup green onion, (greens only thinly sliced) — can substitute with chives
1⁄4 teaspoon garlic powder
2 tablespoons white wine vinegar
2 tablespoons water
1 teaspoon Italian seasoning
1 teaspoon salt
2 to 3 tablespoons extra virgin olive oil
Preparation
1.In a large bowl, whisk eggs together
with the almond milk and dairy-free
cheese. Set aside.
2. Preheat the oven to 350 ̊F.
3. Heat olive oil in an ovenproof skillet
over medium heat. Add the potatoes
and cook for 8 to 10 minutes until
somewhat softened. Add the bell
pepper and scallion greens. Cook for
4 to 5 minutes until softened. Add
garlic powder, Italian seasoning, and
salt. Cook for 1 to 2 minutes.
4. Pour in white vinegar and water,
scraping up browned bits on the
bottom of the pan. Cook for 1 to 2
minutes until liquid has evaporated.
This will help steam the vegetables
as they continue cooking and keep
them soft and not dry out.
5. Add the egg mixture to the pan and
cook for about 3 minutes, until the
sides are set. Top with an extra
pinch of Italian seasoning. Place the
pan on a middle rack in the oven
and bake for 10 to 12 minutes, or
until the middle is set. Serve
immediately.
