These meatballs are low in fat and calories yet bursting with flavors. Complete this healthy entree by serving over roasted spaghetti squash. Not a squash fan, then serve over your favorite pasta noodles.

¾ cup yellow onion, finely diced
3 green apples, finely diced
4 Tbsp dried parsley
2 large eggs
¼ cup pure maple syrup
½ cup almond flour
2 tsp salt
1 oz sage, chopped, (7-8 leaves)
3 lb lean ground turkey

1 ½ cups apple cider vinegar
1 cup brown sugar
¼ cup maple syrup
¼ cup bourbon or sub with chicken broth
1 teaspoon ground ginger
1 teaspoon allspice
Ingredients: Squash
1 spaghetti squash
extra-virgin olive oil
sea salt and freshly ground black pepper

Preheat oven to 350° F
In a large bowl, combine all ingredients (except turkey) and stir
Add turkey and mix to form a homogeneous mixture
Form mixture into evenly sized meatballs of about ¼ cup each (cookie or ice cream scoop assures even sized meatballs)
Place meatballs on a greased or parchment lined baking pan and bake for 30 to 35 minutes, or until they reach an internal temp of 165 degrees
Serve on a bed of spaghetti squash and top with maple bourbon glaze. Recipes below...
Preparation: Glaze
In a large saucepan whisk together apple cider vinegar, brown sugar, maple syrup, bourbon and the spices.
Let simmer for 10 minutes over low heat, so the glaze starts to reduce and thicken.
Preparation: Squash
Preheat oven to 400°F.
Slice the spaghetti squash in half lengthwise and scoop out the seeds and ribbing. Drizzle the inside of the squash with olive oil and sprinkle it with salt and pepper.
Place the spaghetti squash cut side up on a baking sheet. Roast for 30 to 40 minutes or until the knife pokes through easily, but still a little bit firm. The time will vary depending on the size of your squash.
Remove from the oven and let rest. When cool to the touch, use your hand to remove or a fork to scrape and fluff the strands from the sides of the squash. Finished strands should look like spaghetti.
