Spaghetti squash is an underrated vegetable that makes a fantastic side dish or a healthy substitute for pasta. In this video, we'll show you how to roast spaghetti squash to perfection, creating tender strands that resemble spaghetti noodles. This quick and easy recipe is perfect for busy weeknights or when you're craving a lighter meal option.

Ingredients
1 spaghetti squash
extra-virgin olive oil
sea salt and freshly ground black pepper
Preparation
STEP 1
Preheat the oven to 425°F.
STEP 2
Slice the spaghetti squash in half lengthwise and scoop out the seeds and ribbing. Drizzle the inside of the squash with olive oil and sprinkle it with salt and pepper.
STEP 3
Place the spaghetti squash cut side up on a baking sheet. Roast for 20 to 30 minutes or until the knife pokes through easily, but still a little bit firm. The time will vary depending on the size of your squash.
STEP 4
Remove from the oven and let rest. When cool to the touch, use your hand to remove or a fork to scrape and fluff the strands from the sides of the squash. Finished strands should look like spaghetti.
