About the Recipe

Looking for the perfect summer salad. Well, look no further! This ultimate salad combines grilled chicken with a summer blend of fresh Papaya, Mango and Avocado, topped with a light citrus dressing. 

Ingredients

Salad

  • 1⁄2 head red leaf lettuce

  • 1 avocado, peeled and sliced

  • 1 orange sectioned

  • 1 papaya, peeled and sliced

  • 1 mango peeled and sliced

  • 2 boneless, skinless chicken breasts 

  • 1⁄2 bunch cilantro

  • Salt and pepper, to taste


Dressing

  • 1⁄2 cup virgin olive oil 

  • Juice of 1 lime

  • Salt and pepper, to taste

Preparation

  1. Trim and wash red leaf lettuce.

  2. To prepare marinade/dressing - in a bowl, combine lime juice and salt. Whisk in olive oil and pepper.

  3. Prepare fruits and marinate in dressing while grilling chicken. 

  4. Make diagonal slits in the chicken 1/2 inch apart


  5. Tuck some cilantro into the slits. Season chicken with salt and pepper. 


  6. Grill over hot coals until golden. 

  7. Place lettuce on the bottom of plates. Top with marinated fruits and sliced grilled chicken. Dress with marinade and garnish with cilantro leaves.
